  • ½ cup sour cream

  • 1 teaspoon salt, plus more for the cooking water

  • ½ teaspoon black pepper

  • 2 tablespoons chopped fresh parsley

  • Fresh chives, chopped (optional, for garnis

Instructions

Step 1: Prepare the Potatoes

Wash the red potatoes thoroughly and cut them into evenly sized pieces. Leave the skins on for a rustic, flavorful mashed potato.

Step 2: Cook the Potatoes

Place the potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce to a gentle boil and cook for 15–20 minutes, or until the potatoes are fork tender.

Step 3: Make the Garlic Butter

While the potatoes cook, melt 6 tablespoons of butter in a small saucepan over medium-low heat. Add the minced garlic and cook for 1–2 minutes, stirring frequently, until fragrant. Do not let the garlic brown.
