Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
Servings: 8 servings
Ingredients
3 pounds red potatoes, washed and cut into 1½-inch pieces (leave the skins on for extra flavor and texture)
8 tablespoons unsalted butter, divided
6 cloves garlic, minced
¾ cup whole milk, warmed
½ cup sour cream
1 teaspoon salt, plus more for the cooking water
½ teaspoon black pepper
1 teaspoon garlic powder (optional, for extra garlic flavor)
2 tablespoons chopped fresh parsley
Fresh chives, chopped (optional, for garnis
Instructions
Step 1: Prepare the Potatoes
Wash the red potatoes thoroughly and cut them into evenly sized pieces. Leave the skins on for a rustic, flavorful mashed potato.
Step 2: Cook the Potatoes
Place the potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce to a gentle boil and cook for 15–20 minutes, or until the potatoes are fork tender.
Step 3: Make the Garlic Butter
While the potatoes cook, melt 6 tablespoons of butter in a small saucepan over medium-low heat. Add the minced garlic and cook for 1–2 minutes, stirring frequently, until fragrant. Do not let the garlic brown.
Step 4: Drain and Mash
Drain the potatoes well and return them to the warm pot. Let them sit for 1–2 minutes to allow any excess moisture to evaporate. Mash the potatoes using a potato masher until mostly smooth with a few small chunks for texture.
Step 5: Make Them Creamy
Pour the garlic butter over the potatoes. Add the warmed milk, sour cream, remaining 2 tablespoons butter, salt, pepper, and garlic powder (if using). Stir until creamy and well combined. Adjust the consistency with a little more warm milk if desired.
Step 6: Finish and Serve
Fold in the fresh parsley and garnish with chopped chives if desired. Serve immediately with an extra pat of butter on top.
Tips for the Best Mashed Red Potatoes
Start the potatoes in cold water so they cook evenly.
Warm the milk before adding it to keep the potatoes fluffy and creamy.
Avoid overmixing, which can make mashed potatoes gummy.
Leave the skins on for added color, flavor, and nutrients.
Taste before serving and adjust the salt and pepper as needed.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave with a splash of milk and a little butter to restore their creamy texture.
